Shear the corn kernels off the cob, grate some cheddar, sprinkle onto tortillas and cook about 4 minutes per side in a hot skillet (watch that they don&#8217;t burn). Let cool for a couple of seconds, then slice with a pizza cutter into triangles. Eat them hot and melty with salsa and sour cream, or fresh mashed avocado, or diced cilantro, a squeeze of lime, or black bean salad, or all of the above&#8230;</p>
<h3>The menu for this week:</h3>
<p>(Ironic, isn&#8217;t it, that cheese &amp; corn quesadillas aren&#8217;t even on here. But we&#8217;ll probably have some for lunch. Yeah. And please note my amazing attempts at healthiness via the salad/fruit with every meal. <span id="more-1233"></span>I&#8217;m trying to lose the baby weight, I am. We stopped at the produce market yesterday and stocked up. Mmm.)</p>

And probably <strong><span style="color: #800080;">cheese &amp; corn quesadillas</span></strong> for lunch, because Wednesday is Joe&#8217;s day off and he&#8217;ll need something more substantial than the apples and peanut butter, or cheese toast  which is our usual sort of lunch fare.</li>
<li><strong>Thursday: <span style="color: #800080;">Cheesy baked pasta, yet another green salad, cantelope</span></strong></li>
<li><span style="color: #800080;"><strong><span style="color: #000000;">Friday: <span style="color: #800080;">Rice and beans, pineapple &amp; oranges, Greek salad</span></span></strong></span></li>
<li><span style="color: #800080;"><strong><span style="color: #000000;">Saturday: <span style="color: #800080;">Pork steaks in the slow cooker for bbq sandwiches, cole slaw, whatever fruit we have left</span></span></strong></span></li>
<li><span style="color: #800080;"><strong><span style="color: #000000;">Sunday: <span style="color: #800080;">London broil (on sale this week!) in the slow cooker with carrots and onions, mashed potatoes, rolls, fruit</span> </span></strong><span style="color: #000000;">(we&#8217;ll hit the produce market Satuday after work or Sunday after church).</span></span></li>

<address style="margin: 0px; text-indent: 0px;">1/2 cup crunchy peanut butter</address>
<address style="margin: 0px; text-indent: 0px;">1/4 cup (1 stick) butter, softened</address>
<address style="margin: 0px; text-indent: 0px;">1 egg</address>
<address style="margin: 0px; text-indent: 0px;">1/2 cup sugar</address>
<address style="margin: 0px; text-indent: 0px;">1/2 teaspoon baking soda</address>
<address style="margin: 0px; text-indent: 0px;">1 teaspoon cinnamon</address>
<address style="margin: 0px; text-indent: 0px;">1 teaspoon vanilla</address>
<address style="margin: 0px; text-indent: 0px;">1/2 cup flour</address>
<address style="margin: 0px; text-indent: 0px;">1 1/4 cup rolled oats</address>
<address>1 cup dried cherries or cranberries (raisins work, too)</address>
<address style="margin: 0px; text-indent: 0px;">3/4 cup flaked coconut</address>
<address style="margin: 0px; text-indent: 0px;">1 cup dark chocolate chips or nuts (chopped pecans, almonds) or a combination </address>
<p style="margin: 0px; text-indent: 0px;"><span style="font-family: 'DejaVu Sans'; font-size: 9pt;">Preheat oven to 350. Cream the peanut butter, butter, egg, and banana. Add the sugar, baking soda, cinnamon, vanilla, and flour. Beat until well-blended. Stir in the oats, cherries, coconut, and chocolate chips. </span></p>
<p style="margin: 0px; text-indent: 0px;"><span style="font-family: 'DejaVu Sans'; font-size: 9pt;">Drop by tablespoons onto an ungreased cookie sheet. Bake for 10 minutes in the preheated oven. They probably won&#8217;t look done at 10 minutes, but take them out and let them cool on the pan. </span></p>
