Best laid (menu) plans of mice and men

Fresh corn and cheese quesadillas. Mmmm.
p9280008Sometimes (often, in fact) the best food is the simplest. Shear the corn kernels off the cob, grate some cheddar, sprinkle onto tortillas and cook about 4 minutes per side in a hot skillet (watch that they don't burn). Let cool for a couple of seconds, then slice with a pizza cutter into triangles. Eat them hot and melty with salsa and sour cream, or fresh mashed avocado, or diced cilantro, a squeeze of lime, or black bean salad, or all of the above...

The menu for this week:

(Ironic, isn't it, that cheese & corn quesadillas aren't even on here. But we'll probably have some for lunch. Yeah. And please note my amazing attempts at healthiness via the salad/fruit with every meal. I'm trying to lose the baby weight, I am. We stopped at the produce market yesterday and stocked up. Mmm.)

  • Monday: cheeseburgers, a big whopping green salad, fresh strawberries & peaches, baked beans

  • Tuesday: the amazing Ramen stirfry (the ultimate in frugal meals), another big whopping green salad, fresh pineapple
  • Wednesday: Bratwurst & home made yeast rolls (instead of hot dog buns), carrot-apple-raisin salad (because I will need a break from the greens by this point). And probably cheese & corn quesadillas for lunch, because Wednesday is Joe's day off and he'll need something more substantial than the apples and peanut butter, or cheese toast  which is our usual sort of lunch fare.
  • Thursday: Cheesy baked pasta, yet another green salad, cantelope
  • Friday: Rice and beans, pineapple & oranges, Greek salad
  • Saturday: Pork steaks in the slow cooker for bbq sandwiches, cole slaw, whatever fruit we have left
  • Sunday: London broil (on sale this week!) in the slow cooker with carrots and onions, mashed potatoes, rolls, fruit (we'll hit the produce market Satuday after work or Sunday after church).

  • I might make another batch of breakfast cookies because 1) I like them, 2) my husband likes them, 3) my kids like them, 4) they're easy to make ahead and then I don't have to figure out breakfast in the morning and 5) whole grains! Yes! That's it! I'll put the recipe below for anyone who's interested... join in the breakfast cookie fun.

EDIT: Silly me. Forgot to put in the recipe for breakfast cookies. Here goes.

Peanut Butter Breakfast Cookies

1/2 cup crunchy peanut butter
1/4 cup (1 stick) butter, softened
1 egg
1/2 cup sugar
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup flour
1 1/4 cup rolled oats
1 cup dried cherries or cranberries (raisins work, too)
3/4 cup flaked coconut
1 cup dark chocolate chips or nuts (chopped pecans, almonds) or a combination

Preheat oven to 350. Cream the peanut butter, butter, egg, and banana. Add the sugar, baking soda, cinnamon, vanilla, and flour. Beat until well-blended. Stir in the oats, cherries, coconut, and chocolate chips.

Drop by tablespoons onto an ungreased cookie sheet. Bake for 10 minutes in the preheated oven. They probably won't look done at 10 minutes, but take them out and let them cool on the pan.

Makes about 15 largish cookies.
