Menu Plan Monday {08 June 09}

It’s like they “expect” me to “feed” them dinner or something “every” night. Sheesh.

I’ve neglected this whole “menu planning” concept (picture Chris Farley, SNL) for “a few days” and “now” I realize that was  “bad idea” if you “know” what I mean… It’s very “helpful” to have a “menu plan” in place at the “beginning” of the “week.”

Okay. (“Okay.”)

The menu plan -

  • Monday: fried catfish (bought in pre-breaded at the grocery store, yahoo-easy for me), cole slaw, baked hushpuppies
  • Tuesday: red beans & rice with ground turkey, salad
  • Wednesday: (picnic at church) sandwiches, fruit, potato salad, cookies if I get ambitious
  • Thursday: Depending on the price of roast when I go shopping on Wed, we’ll have either a) slow-cooker roast and veggies, mashed potatoes or b) stir-fry with noodles.
  • Friday: pasta, salad, home made garlic bread
  • Saturday: lunch = sandwiches/leftovers, dinner = chicken in the slowcooker which we will make into tacos when we get home. Mmmm. With fresh cilantro, shredded lettuce, jack cheese, a squeeze of lime. One of my favorite meals.
  • Sunday: lunch = chicken enchiladas (pre-made from the slow-cooker chicken of Saturday), black bean salad, tortilla chips. Dinner = leftovers, sandwiches, whatever-you-can-find-to-feed-yourself…

I’m getting hungry already. Time for another breakfast cookie.

Does anybody have a great recipe for dinner rolls? I’ve got the sandwich bread thing down but really yummy soft yeasty rolls elude me. Help?!?

  1. If you have the bread recipe down, just use the same recipe and make it into rolls. You don’t need to bake them as long. You can freeze what you don’t use in large ziploc bags too. You can also use the same recipe for pizza crusts. These freeze well also.

  2. Terrie: Thanks! I might try that. I think I still want to try a different recipe, though, because what I want is some really soft, light, fluffy yeasty rolls. My homemade bread is good with a nice crust, which is great for sandwiches but I think will be a little too crunchy for the rolls.
